Even Healthier Hot Cross Buns

Back in May 2010 I made wholewheat hot cross buns and I got a pretty good reception on them.

It’s not exactly the right time of year for Hot Cross Buns but I gave them another go, but then breads and sultanas never really go out of season!

So how can I claim these are healthier than my wholewheat 2010 buns? Well this time I substituted coconut oil for butter, low fat coconut milk for milk and Light At Heart sugar for, uhm, sugar.

I guess I should be up front about it – I was given Light At Heart sugar for free by Tate and Lyle, however I had been hearing about stevia based products for years and been dying to try them. Unfortunately until December 2011 they weren’t allowed to be sold in Europe! The good thing about Stevia based sugar is that it’s half the calories of normal sugar but it’s all natural. (i.e. Not weird Splenda type stuff that was invented in a lab).

This is a happy medium, I get something sweet but it’s an apple, so it’s obviously healthy – right? Ok so it’s an apple filled with brown sugar, sultanas, nuts and the tiniest hint of butter. But it is AH-MAZ-ING. You need to try this.

Lemony Lentil Soup

Summer Lentil Soup

I haven’t made soup in a long time, it never seems right to make soup in the summer. However I keep getting so many carrots in my vegetable box that I am running out of ideas of how to use them all up. I felt it would be a good start to the weekend to crack on with some cooking, before I get too hungry and pop round to one of the amazing cafes round the corner instead.

I decided to make a simple lentil and carrot soup but keep it light and summery.

Baked Fish and Mustardy Puy Lentils

Some recipes need to work harder than others to impress, a beautifully colored spring salad with bright green leaves and vivid red tomatoes is easy to sell to others. Similarly (but at the opposite end of the spectrum) a pizza oozing cheese, topped with pepperoni and a side of chips is always going to go down well.

However some dishes just don’t have it that easy. Take this recipe for baked fish and puy lentils, it has fish – but not the covered in batter and fried kind – and brown unappetising lentils.

Fennel, Orange and Pecan Quinoa Salad

In January most people start to detox a little after all the Christmas indulgences, I say most people because I did not. I ate my way through all the chocolate and cakes, and then bought or made more. While it was amazing at the time I am starting to notice the negative impacts of all my fun and relaxing.

So here we go. First step a healthy lunch for tomorrow at work.

When I thought about healthy eating I thought salad – but lettuce leaves are boring, or pasta but it’s a bit carb-elicious, then Quinoa came to mind. Quinoa is a great source of protein so it is especially good for vegans and vegetarians (although I am obviously neither).
